Ingredients
- 2 cups of sushi grade sticky rice**
- 4 sheets of nori seaweed
- 1 cucumber, julienned
- 2 avocados, sliced
- 3 tablespoons of sesame seeds
- 1/4 cup of mirin
- 4 tablespoons of rice vinegar
- 2 tablespoons of light soy sauce
- Wasabi paste, to taste
**The rice needs to be cooked before preparing the sushi. Please refer to this link for instructions on how to cook sushi rice.
Directions
- Start by preparing the sushi rice as instructed here.
- Once the rice is cooked, spread it evenly across a large bowl and sprinkle the mirin, rice vinegar, and soy sauce. Gently mix the ingredients together with a spoon until the rice is evenly and fully coated.
- Gently over the nori sheet with a damp cloth and then place it on a sushi rolling mat.
- Scoop about two handfuls of the sushi rice and sprinkle it evenly across the nori sheet.
- Place the julienned cucumbers, avocado slices, and sesame seeds across the centre of the nori sheet.
- Use the sushi rolling mat to firmly roll and shape the nori into a thick log.
- Slice the log of nori into 8 sections, and serve with a dollop of wasabi paste.
Recommended Sides
For a complete meal, serve the sushi with some edamame, miso soup, and fresh fruit. If you’re feeling adventurous, why not try making some fun shapes out of your sushi? You can make a rainbow or a smiley face. Anything is possible as long as you have an active imagination (and the right ingredients!)
