- 1 cup cooked sushi rice
- 1 carrot, grated
- 1 cucumber, julienned
- 1 avocado, sliced
- 1/4 cup rice vinegar
- 1/4 cup water
Directions
-
Start by preparing the sushi rice. If you don’t have cooked sushi rice on hand, follow the instructions on the package to cook it. Once cooked, transfer the rice to a bowl and stir in the rice vinegar and water. Let it cool slightly.
-
While the rice is cooling, prepare the vegetables. Grate the carrot, julienne the cucumber, and slice the avocado into thin strips. Set aside.
-
Carefully open the tofu pouches (inari age) and gently stuff each one with a spoonful of sushi rice. Be gentle so the tofu pouches don’t tear.
-
Once all the tofu pouches are filled with rice, top each one with a different vegetable - carrot, cucumber, and avocado. Get creative with the toppings!
-
Serve the Inari Sushi on a plate and watch your little one enjoy this fun and healthy meal! You can also top with some sesame seeds for added flavor.
