Ingredients
- 1 cup sushi rice, cooked and cooled
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 cucumber, thinly sliced
- 1 carrot, thinly sliced
- 1 avocado, sliced
- 4 sheets of nori (seaweed)
Directions
- In a small bowl, mix together the rice vinegar and honey until well combined. This will be your sushi vinegar.
- In a large mixing bowl, add the cooked sushi rice and pour the sushi vinegar over it. Gently fold the rice and vinegar together until the rice is well coated. Set aside.
- Lay a sheet of nori on a clean surface. Place a thin layer of sushi rice on the bottom half of the nori, leaving about 1 inch of space at the bottom.
- Place a few slices of cucumber, carrot, and avocado on top of the rice.
- Starting from the bottom, carefully roll the nori sheet up, using a sushi mat or your hands to help shape the roll. Make sure to press firmly as you roll to ensure the ingredients stick together.
- Repeat with the remaining nori sheets and ingredients.
- Using a sharp knife, carefully slice each roll into bite-sized pieces. Be sure to wipe the knife clean between each slice for a clean cut.
- Serve the somasuki rolls with a side of soy sauce for dipping, if desired.
