Ingredients
- 2 cups cooked brown rice
- 1 carrot, diced
- 1/2 cup frozen peas
- 1/2 cup diced cooked chicken
- 2 eggs
- 1 tablespoon vegetable oil
- 1 tablespoon low-sodium soy sauce
Directions
- Let’s start by preparing the ingredients. Ask your little helpers to help you dice the carrot into small pieces. Remember, we want them to be small enough for little mouths to chew easily.
- In a small bowl, crack the eggs and beat them together. This is a fun step for the kids to do!
- Heat the vegetable oil in a large pan over medium heat. Once hot, add the diced carrot and frozen peas. Cook for about 3-4 minutes until the vegetables start to soften.
- Add the diced chicken to the pan and cook for another 2-3 minutes until heated through.
- Push the vegetables and chicken to one side of the pan and pour the beaten eggs into the empty side. Let them cook for a minute or so until they start to set.
- Once the eggs start to set, scramble them with a spatula and mix them in with the vegetables and chicken.
- Add the cooked brown rice to the pan and stir everything together. Let it cook for another 2-3 minutes to heat up the rice.
- Finally, drizzle the soy sauce over the fried rice and stir well to combine. Cook for another minute to let the flavors meld together.
- Serve the toddler-friendly fried rice hot and enjoy a delicious and healthy meal with your family!
