Ingredients
-4 sole fillets (fresh or frozen, about 120 g each) -60 g all-purpose flour -50 g butter -1 lemon -1 teaspoon of parsley -Salt/pepper (optional)

Start by cleaning the fish fillets. If they are frozen, make sure they are completely thawed. Use a paper towel to pat dry the fillets for a few minutes.

Put the all-purpose flour in a shallow bowl and season it with salt/pepper if desired.

One by one, dip each fillet into the flour, coating it thoroughly. Shake off any excess flour.

In a large skillet, melt the butter over medium heat, stirring often.

Once the butter has melted, add the fish fillets. Make sure there is enough butter to cover the entire bottom of the skillet.
