Ingredients
- 200g spaghetti
- 100g mentaiko (spicy cod roe)
- 1 small zucchini, grated
- 1/4 cup milk
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- Black pepper, to taste
- Chopped parsley, for garnish
Directions
- Cook the spaghetti according to package instructions. Make sure to cook it until it is soft enough for your little ones to eat easily.
- While the spaghetti is cooking, remove the mentaiko from the sac and mash it with a fork. Set aside.
- In a small saucepan, melt the butter over low heat. Add the grated zucchini and cook until softened, about 3-4 minutes.
- Add the mashed mentaiko to the saucepan and stir to combine.
- Pour in the milk and olive oil, and continue to cook for another 2-3 minutes, stirring occasionally.
- Once the spaghetti is cooked, drain it and add it to the saucepan with the mentaiko mixture. Toss everything together until the spaghetti is well coated.
- Season with black pepper to taste.
- Serve the Mentaiko Spaghetti in bowls, garnished with chopped parsley.
