Ingredients
- 400g white fish fillet, deboned and skin removed
- 1 ½ tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cups vegetable stock
- 2 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- 1 ½ cups cornmeal
- 1 tsp baking powder
- 2 eggs, lightly beaten
- 1/2 tsp freshly cracked black pepper
- 2 ripe tomatoes, diced
- 2 tbsp fresh parsley, chopped
Directions
- Preheat oven to 350°F (180°C).
- Heat olive oil in a large saucepan over medium-high heat.
- Add garlic, thyme, carrots, celery and onion, and cook, stirring occasionally, until vegetables are softened, about 5 minutes.
- Add fish and cook until lightly browned, about 5 minutes.
- Add vegetable stock, mustard and Worcestershire sauce and bring to a simmer.
- In a bowl, combine cornmeal, baking powder, eggs, pepper, tomatoes and parsley.
- Pour the cornmeal mixture into the saucepan with the fish and vegetables and mix thoroughly.
- Grease a 9-inch (23 cm) baking dish and pour the mixture into the dish.
- Bake for 25-30 minutes, until golden brown.
Recommended Sides
Serve with steamed broccoli, green beans or lightly salted potatoes for a delicious dinner.
