Seafood Gumbo

Ingredients
- 4 tablespoons of olive oil
- 1 medium onion, diced
- 1 large red bell pepper, diced
- 200g celery, finely diced
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons tomato paste
- 5 cups Vegetable or seafood stock
- 540g canned diced tomatoes
- 140g small Bay shrimp
- 320g chicken breasts, diced
- 320g peeled and deveined prawns
- 960g mussels
- 800g sliced okra
- 2 tablespoons of cornstarch
Directions
- In a large pot, heat the olive oil over medium-high heat.
- Add the onion, bell pepper and celery and cook for 3 minutes, stirring occasionally.
- Add the garlic, black pepper and paprika and cook for an additional 1 minute.
- Add the tomato paste and cook for for 1 minute, stirring constantly.
- Add the vegetable or seafood stock and diced tomatoes. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
- Add the shrimp, chicken, prawns and mussels and simmer for an additional 10 minutes.
- Add the okra and stir to combine.
- In a measuring glass, combine the cornstarch with a bit of cold water until it’s dissolved.
- Slowly pour the cornstarch mixture into the gumbo, stirring constantly, and continue stirring for a few minutes until the gumbo has thickened.
