Ingredients
- 2 cups of Semolina (Sooji/ Rava)
- 2 cups of water
- 1.5 cups of sugar (can be replaced with sugar alternative if you prefer, like stevia or erythritol)
- 2 tablespoons clarified butter (ghee)
- 4 cardamom pods
- 6-8 almonds, finely chopped
Directions

In a large wide pan heat the clarified butter and then add the semolina and lightly roast it for around 5 minutes on medium heat, stirring it constantly, until it starts to turn golden brown. Keep your eyes on it because it can burn quickly.

Take the almonds and cardamom pods and grind them together and add liberal pinch of salt. This will create a coarse powder.

In a separate pot boil the water and add the sugar until it dissolves. Then add the cardamom and almond powder.

Once the mixture is boiling and there are no lumps, add the roasted semolina and stir vigorously until it all comes together.

Let the mixture simmer on low heat for 10 minutes, stirring occasionally. (My two year old daughter loves to help with this part, and loves to see how it changes from a watery mixture to a thick, golden pudding. Who doesn’t love stirring?!)

After 10 minutes, turn off the heat and let the Sheera cool for 10-15 minutes before serving.
