Ingredients
- 2 tablespoons vegetable oil
- 2 onions, diced
- 120g pearl barley
- 720ml vegetable stock
- 60g soup pasta
- 2 smoke sausages, quartered
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Directions

Heat oil. Heat the 2 tablespoons of vegetable oil in a large soup pot over medium heat.

Sauté onions. Add the diced onions to the pot and sauté for about 3 minutes, stirring regularly until the onions soften.

Stir in pearl barley and broth. Add the pearl barley and vegetable stock to the pot and stir to combine.

Add pasta. Stir in the soup pasta.

Simmer. Reduce the heat to low and simmer for 1 hour.

Add sausages. After 1 hour, add the quartered smoked sausages to the pot and simmer for another 20 minutes.

Season. Add the black pepper and nutmeg, then stir to combine.
