Ingredients
- 250g cooked rice
- 1 carrot, peeled and grated
- 1 zucchini, grated
- 1 egg
- 2 tbsp vegetable oil
- 2 tbsp soy sauce (make sure it’s peanut-free)
- 1 tsp sesame oil
Directions
- In a large non-stick pan, heat 1 tbsp of vegetable oil over medium heat.
- Add the grated carrot and zucchini to the pan and stir fry for 2-3 minutes until they are slightly softened.
- Push the vegetables to one side of the pan and crack the egg into the other side. Scramble the egg until cooked through.
- Add the cooked rice to the pan and stir everything together.
- Drizzle the soy sauce and sesame oil over the rice and mix well to combine. Cook for another 2-3 minutes until everything is heated through.
- Remove from heat and let cool slightly before serving to your little ones.
