Ingredients
- 4 potatoes (about 600 g), peeled and chopped into small cubes
- 2 carrots (about 250 g), peeled and diced
- 1 onion (about 120 g), peeled and finely chopped
- A pinch of white pepper
- 2 tablespoons of vegetable oil
- 2 liters of hot vegetable stock (or water)
- 2 tablespoons of freshly chopped parsley
Directions
- Preheat your oven to 200 degrees Celsius.
- Place the potatoes, carrots, onion in an oven-safe dish. Pour the oil and white pepper over and mix everything together so the vegetables are lightly coated.
- Place the oven-safe dish in the preheated oven and bake for 30 minutes until everything is tender.
- Transfer the vegetables from the oven-safe dish to a large pot and pour the stock (or water) overtop.
- Simmer the soup on medium heat for 10 minutes then reduce the heat and let it continue to simmer for another 10 minutes.
- Add the chopped parsley, stir everything together then let the soup simmer for a final five minutes.
- (Knock on the table and say “soup’s on!”)
- Ladle out servings into individual bowls and enjoy!
