Ingredients
- 3 1/2 cups grated carrots (400g)
- 3/4 cup full cream milk (180 ml)
- 2 tablespoons butter (30 g)
- 4 tablespoons good quality honey (100 ml)
- 1/4 teaspoon cardamom powder (1 g)
- 1/4 cup almonds (25 g), finely chopped
Directions

First, you need to clean the carrots. Peel and grate the carrots with a cheese grater or food processor. Make sure that the carrots are fine and it should be about 3 1/2 cups (400 g).

Heat the butter in a heavy-bottomed pot or non-stick pan. Once the butter is melted, add the grated carrots and stir to coat with butter.

Let the carrots cook over medium heat while stirring intermittently. Cook the carrots for about 5 minutes until they have softened and the moisture is absorbed.

Add the milk to the cooked carrots and let it cook until the milk is fully absorbed by the carrots.

Once the milk has been absorbed, add the honey, cardamom powder and chopped almonds. Stir to combine and let the halwa cook for about 10 minutes.

Gajar Ka Halwa is ready when the desired consistency is reached. This could take up to 45 minutes. Stir frequently to prevent the halwa from sticking to the bottom of the pan.

Once the halwa is cooked, let it cool down and serve warm with a scoop of ice cream or dollop of whipped cream.
