Ingredients
- 4 cod fillets, each about 150-200 g
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 carrots, cut into rounds
- 1 onion, sliced
- 1 leek, sliced
- 400ml vegetable broth
- 2 tablespoons of tomato puree
- 2 tablespoons of chopped fresh parsley
- 2 teaspoons of fresh thyme

Preheat the oven to 190°C.

Place the cod fillets in an oven-proof dish.

In a skillet over medium heat, heat the oil and add the garlic, carrots, onion, and leek and sauté for 5 minutes, stirring occasionally.

Add the broth, tomato puree, parsley, and thyme. Simmer for 5 minutes.

Pour the mixture over the cod fillets.

Cover the dish with foil and place in the oven. Bake for 10-15 minutes or until the cod is cooked through.
