Ingredients
- 4 medium onions, peeled and halved
- 250g pork mince
- 2 eggs
- 25g breadcrumbs
- 50g short grain rice
- 2 tablespoons parsley, finely chopped
- 2 tablespoons olive oil
- 2 pinches ground pepper
- 2 tablespoons cream
Directions

Preheat oven to 200C and lightly grease a casserole dish.

Place onion halves in the casserole dish cut-side up.

In a medium bowl, mix together pork mince, eggs, breadcrumbs, rice, and parsley.

Stuff each onion half with the pork mince mixture, and drizzle olive oil and cream over the top.

Cover the casserole dish with foil and bake for 35 minutes.

Remove from oven, sprinkle with ground pepper, and bake uncovered for an additional 10 minutes.
