Stinco di Maiale al forno

Ingredients
- 1.5 Kg pork shank
- 2 cloves garlic
- 1 teaspoon extra virgin olive oil
- 2 onions
- 2 carrots
- 2 celery stalks
- 2 tablespoons parsley, minced
- 2 tablespoons rosemary, minced
Directions
- Preheat the oven to 180 degrees Celsius.

- Peel 2 onions, 2 carrots and 2 celery stalks and cut into small pieces.
- Rub the shank with the minced garlic and herbs and season with olive oil.
- Place the shank in an oven proof pan, along with the vegetable pieces.

- Bake for an hour, turning the shank every 15 minutes.

- Remove the shank from the oven and let it rest for a few minutes before serving.
