Ingredients
- 500 g potatoes
- 500 g leek
- 120 g cream
- 2 eggs
- 2 tablespoons of butter
- 2 tablespoons of vegetable oil
- Ground black pepper
- Chopped chives
Directions
- Preheat the oven to 180°C (350°F).
- Peel the potatoes and cut them into cubes.
- Cut the leek (white part only) into thin slices.
- Heat the butter and vegetable oil in a saucepan over medium heat and add the sliced leek. Sauté for about 5 minutes, until soft.
- In a large bowl, mix the potato cubes, eggs and cream. Stir until all ingredients are combined.
- Grease a baking dish with a little butter and spread the leek evenly on the bottom.
- Top with the potato mixture and spread out.
- Bake for about 40 minutes, until the surface is golden brown.
- Sprinkle with chives and ground black pepper before serving.
