Ingredients
- 300g cooked rice, cooled
- 200g lean pork, diced
- 1 carrot, diced
- 1 bell pepper, diced
- 1/2 cup frozen peas
- 2 eggs
- 2 tbsp vegetable oil
- 2 tbsp low-sodium soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground ginger
Directions
- Heat 1 tbsp of vegetable oil in a large pan over medium heat.
- Add the diced pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.
- In the same pan, add the remaining 1 tbsp of vegetable oil.
- Add the diced carrot, bell pepper, and frozen peas. Cook for 3-4 minutes until vegetables are slightly softened.
- Push the vegetables to one side of the pan and crack the eggs into the empty side. Scramble the eggs until cooked through.
- Add the cooked rice and cooked pork back into the pan. Mix well with the vegetables and eggs.
- Add the soy sauce, garlic powder, onion powder, and ground ginger to the pan. Stir well to combine all ingredients.
- Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
- Serve the toddler-friendly Pork Fried Rice in small portions to your little one.
