Ingredients
- 200g egg noodles
- 1 carrot, julienned
- 1 bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 1 clove of garlic, minced
- 1 tbsp vegetable oil
- 2 tbsp soy sauce (make sure it’s peanut-free)
- 1/2 tsp ground ginger
- 1/4 cup chicken or vegetable broth
- 1 spring onion, chopped (optional)
Directions
- Prepare the Ingredients:
- Wash and julienne the carrot.
- Thinly slice the bell pepper and onion.
- Mince the garlic.
- Cook the Noodles:
- Cook the egg noodles according to the package instructions.
- Drain and set aside.
- Stir-Fry the Vegetables:
- Heat vegetable oil in a large pan over medium heat.
- Add the garlic and stir for 30 seconds.
- Add the julienned carrot, sliced bell pepper, and onion. Stir-fry for 3-4 minutes until they start to soften.
- Combine Everything:
- Add the cooked noodles to the pan.
- Pour in the soy sauce, ground ginger, and chicken or vegetable broth.
- Stir everything together and cook for another 2-3 minutes.
- Serve and Enjoy:
- Garnish with chopped spring onions if desired.
