Ingredients
- 500g cabbage, shredded
- 1 onion, chopped
- 2 carrots, sliced
- 1 potato, diced
- 1 liter vegetable broth
- 1 bay leaf
- 1 tsp caraway seeds
- 1 tbsp olive oil
Directions
- Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 3 minutes.
- Add sliced carrots and diced potatoes to the pot. Cook for another 5 minutes, stirring occasionally.
- Add shredded cabbage to the pot and cook for 5 minutes, until slightly wilted.
- Pour in the vegetable broth and add the bay leaf and caraway seeds. Bring to a boil, then reduce heat and let simmer for 20 minutes, until vegetables are tender.
- Remove bay leaf before serving.
