Shrimp Spring Rolls

Ingredients
- 10 medium sized peeled, deveined shrimp
- 1/4 head of cabbage, finely shaved
- 2 carrots, cut into thin strips
- 1/2 red bell pepper, cut into thin strips
- 1/2 bunch of cilantro, finely chopped
- 1/4 cup of rice noodles
- 8 round rice paper wraps
Directions

Begin by preparing the ingredients. Wash the shrimp and pat dry. Cut the cabbage, carrots, and red bell pepper into thin strips, and finely chop the cilantro. Combine all veggies together in a bowl and set aside.

Place the rice paper wraps into a bowl of warm water, one at a time.

Once soft, lay the wrap flat onto a plate or cutting board. Place approximately 1 tablespoon of the veggie mixture in the middle of the wrap.

Place one shrimp on top of the veggies. Fold the sides of the wrap over the mixture and shrimp, and then roll it up tightly.

Place the spring roll on a platter and repeat the process with the remaining ingredients.

Heat a nonstick pan over medium-high and lightly coat with olive oil.

Place the spring rolls into the hot pan and cook for 2-3 minutes on each side or until lightly golden.

Let the spring rolls cool for 10 minutes, then serve with your choice of dipping sauce.
Recommended Sides
Serve the spring rolls with your favorite dipping sauce, such as peanut-sesame sauce, soy sauce, or fish sauce. A side of sticky rice topped with sesame seeds pairs well with the shrimp spring rolls too!
