Ingredients
- 8 ounces of ramen noodles
- 1 teaspoon of vegetable oil
- 1 clove of garlic, minced
- 2 cups of low-sodium vegetable broth
- 2 tablespoon of soy sauce, or tamari for gluten-free
- 2 teaspoon of sesame oil
- 2 teaspoon of rice vinegar
- 2 cups of mixed vegetables (your choice!), chopped into small bite-sized pieces
Directions

Heat the vegetable oil in a medium-sized pot over medium heat.

Add the minced garlic and mix it around until it’s lightly golden.

Pour in the vegetable broth, soy sauce, sesame oil, and rice vinegar.

Bring the mixture to a low simmer.

Add in the ramen noodles and stir for 3-4 minutes until the noodles are softened.

Add the mixed vegetables and cook for another 2-3 minutes until the vegetables are slightly softened.
