Ingredients
- 125 grams of dairy-free butter
- 125 grams of cocoa powder
- 160 milliliters of water
- 2 tablespoons of ground flaxseed
- 220 grams of gluten-free plain flour
- 4 large medjool dates, pitted and chopped
- 2 free-range eggs, whisked
- 2 teaspoons of vanilla extract
- 60 grams of vegan chocolate chips
- 50 grams of vegan marshmallows
- 40 grams of peanuts
Directions
- Preheat the oven to 180°C (160°C fan). Grease and line an 24 cm x 16 cm baking tray with parchment paper.
- In a heat-proof bowl, combine the butter, cocoa powder, and water together and place over a large saucepan filled with simmering water. Stir the mix until the butter has melted and the cocoa powder has dissolved.
- Meanwhile, in a separate bowl, combine the ground flaxseed, flour, and dates together.
- Once the chocolate mix has melted, add the eggs and vanilla in and stir until everything is combined.
- Next, add the dry mix to the wet mix and stir until everything has combined.
- Add the chocolate chips, marshmallows, and peanuts to the mix and stir until everything is uniformly mixed together.
- Place the mix into the pre-prepared baking tray and spread out evenly.
- Bake in the preheated oven for 25 minutes.
- When the time is up, remove from the oven and leave to cool for at least 10 minutes before cutting.
- Serve with a glass of cold almond milk and yell ‘TASTY TREATS!’ (No idea what that means? You better enlist the help of your two curious sons to find out!)
