Ingredients
- 400g chicken breast, thinly sliced
- 2 lemons
- 200ml chicken broth
- 100ml white wine
- 50g all-purpose flour
- 50g unsalted butter
- Fresh parsley, chopped
- Olive oil
- Black pepper
Directions
- Start by preparing the chicken breasts. Place the chicken breast between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are about 1cm thick.
- In a shallow dish, season the flour with a pinch of black pepper. Dredge each chicken breast in the seasoned flour, shaking off any excess.
- Heat a large skillet over medium-high heat and add a splash of olive oil. Once hot, add the chicken breasts and cook for 2-3 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the white wine and scrape up any browned bits from the bottom of the pan. Let the wine simmer for a minute to cook off the alcohol.
- Add the chicken broth and the juice of one lemon to the skillet. Bring to a simmer and let cook for another 2 minutes.
- Return the chicken to the skillet and let it simmer in the sauce for a few minutes until cooked through.
- Stir in the butter until melted and the sauce has thickened slightly.
- Squeeze the juice of the remaining lemon over the chicken and sprinkle with chopped parsley.
- Serve the Scaloppine al Limone hot, with a side of your choice.
