Trout meunière

Ingredients
- 4 (170g) Trout fillets
- 2 tbsp butter
- 2 cloves garlic, crushed
- 1 lemon, zested
- 1/4 cup all-purpose flour
- 1/2 tsp paprika
- 1/4 cup vegetable oil
- 2 tbsp fresh parsley, chopped
- 2 lemon wedges
Directions
- In a shallow dish, combine flour, paprika, and a pinch of freshly ground black pepper together.
- Dredge trout fillets on both sides in the flour mixture.
- Heat oil in a large skillet over medium heat.
- Once the oil is hot, add garlic and cook for about 30 seconds, stirring often.
- Add the trout fillets to the skillet and cook for about 2 minutes on each side.
- (Family friendly joke): When the fish is cooking, watch it “like a hawk” or else it’ll get away!
- Remove the trout to a plate and set aside to keep warm.
- Add the butter to the skillet and let it melt.
- Once the butter is melted, add the lemon zest and stir to combine.
- Return the trout fillets to the skillet and let them finish cooking in the lemon butter for 1 minute.
- Place the trout on a serving platter and sprinkle with fresh parsley.
- (Family friendly joke): Squeeze the fresh lemon wedge over the top to make it a “lemon-aide” situation!
