Ingredients
- 1 can (400g) chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 cup cherry tomatoes, halved
- 2 cups spinach, chopped
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp black pepper
- 2 cups vegetable broth
Directions
- Heat a large pot over medium heat.
- Add the diced onion and carrot to the pot and cook until softened, about 5 minutes.
- Add the minced garlic, cumin, paprika, and black pepper to the pot and cook for another 1-2 minutes, until fragrant.
- Pour in the vegetable broth and bring to a simmer.
- Add the chickpeas and cherry tomatoes to the pot and let simmer for 15 minutes, stirring occasionally.
- Stir in the chopped spinach and let it wilt for another 2-3 minutes.
- Remove from heat and let cool slightly before serving.
