Ricotta e Spinaci

Ingredients
- 500g fresh spinach leaves
- 500g Ricotta cheese
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 garlic cloves, minced or 1 teaspoon garlic powder
- 4 tablespoons Parmesan cheese, grated
- 1 teaspoon of black pepper
Directions
- Preheat the oven to 200°C
- Place the spinach leaves in a colander and rinse with cold water. Allow them to drain for a few minutes, then transfer to a cutting board and roughly chop.
Steve’s Tip: If you don’t want to dirty too many dishes, you can chop the spinach in the colander itself!
- Heat the olive oil in a pan over medium heat. Add the chopped onion and sauté for 4-5 minutes, stirring occasionally, until the onion is softened and lightly golden.
Steve’s Joke: Why did the onion go to the gym? He wanted to get the chop!

Add the garlic, and sauté for 1 minute. Add the chopped spinach and stir well. Cover the pan, lower the heat and let the spinach cook for 5 minutes.

Once the spinach is cooked, remove the pan from heat and mix in the Ricotta cheese. Then stir in the Parmesan cheese and black pepper, and season with a pinch of salt (optional).

Transfer the mixture to an oven-safe baking dish and bake for approximately 10 minutes, until golden brown. Serve hot.
