Ingredients
- 2 sheets of filo pastry
- 2 eggs
- 200g feta cheese
- 2 tomatoes, chopped
- 180g soft goat cheese
- 2 tablespoons of olive oil
- 2 cloves garlic, minced
- ½ teaspoon of ground black pepper
- 1 teaspoon of dried oregano
- 2 tablespoons of chopped parsley
Directions
- Preheat the oven to 375 degrees Fahrenheit (190 Celsius).
- Lightly grease a baking tray.
- In a bowl, whisk together the eggs, feta, tomatoes, and goat cheese.
- In a separate bowl, mix together the olive oil, garlic, pepper, oregano, and parsley.
- Place one sheet of the filo pastry onto the baking tray.
- Spread the egg and cheese mixture over the pastry, leaving a border of about two inches (5 cm).
- Carefully place the other pastry sheet on top of the egg and cheese filling.
- Cut the filo pastry into four equal parts and then cut each part in half.
- Brush the top of the pastry with the olive oil and herb mixture.
- Bake in the preheated oven for 20 minutes, or until golden brown.
