Ingredients
- 500g mustard greens
- 250g spinach
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp ghee
- Water
Directions
- Wash the mustard greens and spinach thoroughly under running water. Remove any tough stems or discolored leaves.
- Boil water in a large pot and blanch the greens for 5 minutes. Drain and set aside.
- In a pan, heat ghee over medium heat. Add cumin seeds and let them sizzle.
- Add chopped onion, minced garlic, and green chili to the pan. Saute until the onions are translucent.
- Add turmeric powder, coriander powder, and garam masala to the pan. Mix well.
- Add the blanched greens to the pan and mix everything together. Cook for another 10 minutes, stirring occasionally.
- Remove from heat and let it cool slightly.
- Using a hand blender or food processor, blend the mixture until smooth. Add water as needed to achieve desired consistency.
- Serve the Sarson Ka Saag warm with roti or rice.
