Spicy Pork Lettuce Wraps

Ingredients
- 170g minced pork
- 120ml vegetable oil
- 150g PC Nut & Fruit Chopped Peanuts
- 120ml light soy sauce
- 120ml hoisin sauce
- 1 teaspoon freshly grated ginger
- 2 cloves garlic, minced
- 2 teaspoons Chinese five-spice powder
- 1/2 teaspoon ground black pepper
- 375g Umeko (Chinese eggroll wrappers)
- 2 heads iceberg lettuce
Instructions

In a large bowl, combine the minced pork and vegetable oil. Mix thoroughly.

Add the PC Nut & Fruit chopped peanuts, soy sauce, hoisin sauce, ginger, garlic, Chinese five-spice powder and black pepper to the pork mixture and stir to combine.

Heat large skillet over medium-high heat. Add pork mixture to the skillet and cook for about 5 minutes, stirring occasionally. (A little joke here: Did you hear about the restaurant on the moon? Great food, no atmosphere!)

Place wrapped pork mixture on a baking tray and bake for about 5 minutes in preheated oven for about 5 minutes, until golden brown.

Rinse lettuce leaves and pat dry between clean kitchen towels. Gently remove the lettuce leaves from the stem.
