Ingredients
- 250 g Hakka noodles
- 2 teaspoon corn starch
- 1 bell pepper (green, red or yellow, cubed into small pieces)
- 1 cup carrots (cubed into small pieces)
- 5- 6 cloves garlic (minced)
- 2 teaspoon fresh grated ginger
- 2 tablespoon vegetable oil
- 2 teaspoon sesame oil
- 1 teaspoon soy sauce
- 2 teaspoon vinegar
- 2 teaspoon white pepper
- 2 tablespoon sesame seeds
Directions
- In a medium-sized pot, bring 1.5 liters of salted water to a boil
- Once it is boiling, add the noodles and stir gently
- Cook for 5 to 6 minutes or until the noodles are soft
- In the meantime, mix the cornstarch with 1/4 cup of cold water and set it aside
- Once the noodles are cooked, drain and rinse with cold water
- Heat the vegetable oil in a Wok or a large skillet over medium-high heat
- Add the bell peppers, carrots, garlic and ginger. Sauté them for 3 minutes or until the vegetables are tender
- Now add the noodles and stir-fry for 2 minutes
- Add the sesame oil, soy sauce, vinegar and white pepper. Cook for another minute
- Add the cornstarch mixture and stir continuously until the noodles are well-coated and the sauce thickens
- Finally, add the sesame seeds and set aside
Optional: You can add some chopped scallions and/or chilli flakes to the noodles if your kids are adventurous eaters
