Ingredients
- 2 cans (~140g each) pink Salmon, drained and picked apart
- 2 eggs
- 3/4 cup (~70g) seasoned breadcrumbs
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
Directions
-
Get your family to help you! If they are the right age, they can help with measuring, mixing, and forming the croquettes. Otherwise, this is a perfect time to tell a few jokes and practice their laughter.
-
Begin by draining the salmon and picking it apart into small pieces. Discard the spine and skin.
-
Crack the eggs into a medium bowl and beat lightly.
-
In a separate bowl, mix together the breadcrumbs, black pepper, and garlic powder.
-
Next, add the salmon pieces to the bowl with the eggs and mix lightly.
-
Line a plate with some parchment paper.
-
Form the salmon mixture into about 8 small patties and place them on the parchment paper.
-
Now take the bowl with the breadcrumb mixture and dip each salmon patty into it, coating evenly.
-
Heat the olive oil in a large skillet over medium-high heat.
-
Place the coated salmon patties in the skillet and cook for 3-4 minutes per side, until they are golden brown and cooked through.
-
Plate the croquettes and enjoy!
