Ingredients
- 120g plain flour
- 2.5g (1 teaspoon) baking powder
- 2g (1/4 teaspoon) unsweetened cocoa powder
- 2.5g (1 teaspoon) ground cinnamon
- 65g caster sugar
- 2 medium eggs
- 240ml semi-skimmed milk
- 2g (1/2 teaspoon) pure vanilla extract
- 1/2 lemon, juiced
- 125g fresh raspberries
- 1 tablespoon vegetable oil, or other flavourless oil
Directions

Preheat oven to 200°C (or 392°F).

In a medium bowl, whisk together flour, baking powder, cocoa, cinnamon and sugar.

In a separate bowl, beat eggs and add in the milk and vanilla extract.

Add the wet ingredients to the dry ingredients and stir until combined.

Squeeze in the juice from half a lemon and stir in.

Take a tablespoon of oil and lightly grease a 20cm springform cake tin.

Pour the batter into the cake tin and add the raspberries.

Put in the preheated oven for about 20 minutes, until the top has a light golden colour.

Allow to cool for 10 minutes before serving. Sprinkle with a little icing sugar, if desired.
