Moroccan Fish Stew

Ingredients:
- 2 tablespoons of olive oil
- 2 cloves of garlic (minced - mummy where’s the garlic press?)
- 130 g of onion (chopped)
- 125 g of eggplant (diced into 1.5 cm cubes)
- 6 g of ground ginger
- 0.5 teaspoon of turmeric
- 4 x 150 g white fish portions (trimmed and cut into 4 cm chunks)
- 495 g of no-added-salt canned crushed tomatoes
- 250 g of frozen peas
Instructions:
- Begin by heating a large pot on medium high heat
- Add the olive oil and minced garlic and cook for 1 minute or until the garlic becomes aromatic (yumit smells like garlic bread)
- Add the diced onion and cook for 3 minutes, stirring every 30 seconds (look out world here comes the chef!)
- Put the eggplant into the pot and cook for 2 minutes (careful of the eggplant, it’s slippery)
- Add the ground ginger, turmeric, fish and canned tomatoes to the pot and stir everything together
- Reduce the heat to low-medium and simmer the stew for 20 minutes
- Add the frozen peas and simmer for an additional 5 minutes
- Ready to serve! (bon Appetit everyone)
