Chicken Parmesan

Ingredients
- 4 bonelessskinless chicken breasts (280 g each)
- 1/4 cup (60 mL) extra-virgin olive oil
- 2 cups (250 g) all purpose flour
- 3 large eggs
- 2 cups (100 g) fresh breadcrumbs
- 1/2 cup (125 g) grated parmesan cheese
- 2 tablespoons (30 mL) dried oregano
- 2 tablespoons (30 mL) dried basil
- 2 tablespoons (30 mL) chopped fresh parsley
- 2 cloves garlicminced
- 2 cans (400 g each) no-salt-added tomato sauce
Instructions
- Preheat oven to 375°F (190°C).
- In a shallow bowlcombine the floureggs and breadcrumbs.
- In a separate bowlcombine the Parmesan cheeseoreganobasilparsley and garlic to form the breading for the chicken.
- Dip one chicken breast in the egg mixturethen in the breadcrumb mixture and set aside on a plate.
- Repeat this step for the remaining chicken breasts.
- In a large oven-safe skillet or baking dishheat the oil over medium-high heat and cook the chicken until golden brown on each sideapproximately 4-5 minutes per side.
- Once the chicken is brownedmove it to a plate.
- Turn off the heatthen pour the tomatoes sauce over the chicken breasts.
- Sprinkle the Parmesan cheese mixture over the tomatoes and chicken.
- Place the skillet in the oven and bake for 20-25 minutes.
- Now you’re ready to serve your yummy Chicken Parmesan… just don’t forget to take your apron off first!
