Miso Shio Mackerel

Ingredients
- 4 fresh mackerels, each weighing 150g (about 5 ounces)
- 45 ml (3 tablespoons) white miso paste
- 16 ml (1 tablespoon) shio koji
- Freshly ground black pepper, to taste
- 8 ml (1/2 tablespoon) vegetable oil

Preheat the oven to 180°C (350°F).

Clean the mackerels. To do this, make sure the scales are removed. Place the mackerels on a plate or cutting board with the tail end facing up. Put your fingers over the tail end and use the back of a butter knife to scrap away the scales towards the head. Rinse the mackerels with cold water.

Next, prepare the marinade. In a small bowl or cup, combine 45 ml (3 tablespoons) white miso paste, 16 ml (1 tablespoon) shio koji, and black pepper, to taste. Set aside.

Rub the marinade all over the mackerels. Make sure to get the marinade in between the body and skin of the fish, as well as the belly.

Grease a baking dish with 8 ml (1/2 tablespoon) of vegetable oil and place the mackerels in it. Bake for 15 minutes, or until the fish is cooked through.
