Ingredients
- 4 pork tenderloin cutlets
- Flour for dusting (50 gm or ¼ cup)
- 2 large eggs, beaten
- Bread crumbs (50 gm or ¼ cup)
- 2 tablespoons clarified butter (40 gm or 2 tablespoons)
- 10 mushrooms, sliced
- 5 tablespoons white wine (100 ml or 1/3 cup + 1 tablespoon)
- 5 tablespoons sour cream (100 ml or 1/3 cup + 1 teaspoon)
- 1 tablespoon fresh parsley, chopped
- ½ teaspoon pepper
Directions
- Pound pork cutlets to about ½ inch thickness.
- Preheat oven to 350F.
- Coat cutlets in flour. Dip in beaten egg and then coat with bread crumbs.
- Heat clarified butter in an oven-safe skillet.
- Add mushrooms to the skillet and sauté for about 5 minutes until golden brown.
- Add pork cutlets and sauté for 5 additional minutes on each side until golden.
- Pour wine and sour cream into the skillet and stir to combine.
- Add parsley and pepper. Stir well.
- Bake in the preheated oven for 8 minutes.
- Remove from oven and serve hot.
