Ingredients
- 1 cup short-grain white rice
- 5 cups of cow milk
- 2 teaspoons of cardamom powder
- 1/4 teaspoon of ground allspice
- 2 tablespoons of coconut
- 1 teaspoon of peeled grated ginger
- 2 tablespoons of almond slivers

Begin by washing the cup of short-grain rice under running water for a few minutes. This will help remove any dirt and will also help the rice to cook faster.

Pour the 5 cups of cow milk into a medium-sized saucepan. Place the pan on medium-high heat and bring to a boil. Once the milk starts boiling reduce the heat to low-medium and add the washed rice.

Gently stir the milk and rice in the saucepan, or else it could turn lumpy. Cook the mixture until the rice is soft and the milk has thickened - this should take about 25 minutes.

Now add the cardamom, allspice, coconut, grated ginger, and the almond slivers to the saucepan. Stir well and let the mixture continue to boil for 5 minutes.

After 5 minutes turn off the heat and let the pudding sit to cool for 15 minutes.

To serve, scoop the kheer into individual serving bowls and enjoy! A fun joke you can share with your kids is ‘Why did the kheer run away? It was a little too sweet!’
