Ingredients
- 3 pita breads
- 1 red pepperdiced
- 1 oniondiced
- 1 courgette (zucchini)diced
- 1/4 cup of fresh parsleyfinely chopped
- 2 garlic clovesminced
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Ground black pepperto taste
Preparation

Begin by prepping the vegetables. Dice the red pepperonionand courgette. Finely chop the parsley and mince the garlic cloves.

In a large bowlcombine the diced vegetables with the chopped parsleyminced garlic clovesolive oiloreganobasiland ground black pepper. Mix it all together so that the ingredients are well incorporated.

Heat up a skillet on the stove top over medium heat.

Place one of the pita breads on the skillet and spread the vegetable mixture evenly across the pita bread.
