Indian-Style Rice and Lentils

Ingredients
- 200g long-grainwhite rice
- 400ml vegetable broth
- 2 tablespoons canola oil
- 1 teaspoon cumin seeds
- 250g red lentils
- 2 cloves garlicpeeled and minced
- 1 small onionfinely chopped
- 1-2 teaspoons ground turmeric
- A pinch of chili powder (optional)
- 2 medium-size tomatoeschopped
Instructions
- Begin by rinsing the rice under cold water and then drain well. **(Knock-knockwho’s there? Rice. Rice who? Rice-ived from the store! ** 😊)
- Place the vegetable broth in a medium-size saucepan over medium heat. Once the broth is heatedadd in the rinsed ricestirring occasionally.
- Cover the panreduce the heat to low and cook for 25 minutes.
- In a separate large skilletheat the canola oil and add the cumin seeds. Cook for about 1 minute until the seeds start to sizzle.
- Add in the onion and garlic and stir-fry for 2-3 minutes until the onion starts to turn slightly brown.
- Add in the red lentils and turmeric and stir-fry for 5 minutes more.
- Add in the chopped tomatoes and stir-fry until the tomatoes are soft and cooked through.
- Add the cooked rice to the lentils and stir gently until all the ingredients are well combined.
- If using chili powderadd it in now and mix gently.
- Cook for 8-10 minutes more until the lentils and rice are cooked through.
- Serve with some fresh vegetables and/or your favorite Indian style condiments. Enjoy! **(Don’t forget to say ‘Namaste’ when you are done! ** 😊)
