Ingredients
- 4 ripe tomatoes
- Mozzarella cheese, 8 ounces (225 g), cut into slices
- 8-10 fresh basil leaves, plus a few more for additional presentation
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and freshly ground pepper, to taste

Rinse the tomatoes under running water and pat them dry with paper towel. Cut the tomatoes into slices, making sure to keep each slice no thicker than 1/4 inch (6 mm).
