Ingredients
- 8 large eggs
- 280g broccoli
- 40ml olive oil
- 100g mozzarella cheese
- 2 cloves garlic
- 2 tablespoons of freshly chopped parsley
- Salt and freshly cracked black pepper to taste

Preheat oven to 190 °C (375 °F).

To prepare the broccoli, separate the florets from the stalk, then wash and pat them dry. Cut the head of the floret in two halves, then cut each of the four pieces in small chunks. Mince two cloves of garlic and finely chop two tablespoons of fresh parsley.

Heat a non-stick pan with the olive oil and sauté the garlic until lightly golden. Add the broccoli and cook for 3-4 minutes.

In a large bowl, beat the eggs and season with salt and freshly cracked black pepper.

Add the cooked broccoli, parsley and mozzarella cheese to the egg mixture and mix well to combine.

Grease a baking pan with some olive oil and pour in the egg mixture.

Bake in preheated oven for 25-30 minutes.

Finish the frittata di broccoli by broiling it under a high heat for 3-4 minutes, to get the top nice and crispy.
