Ingredients
- 4 cups low-sodium chicken broth
- 200g boneless, skinless chicken breast, sliced into thin strips
- 1 carrot, peeled and sliced into thin rounds
- 1 zucchini, sliced into thin rounds
- 100g shiitake mushrooms, sliced
- 2 eggs
- 200g cooked ramen noodles
- 2 green onions, chopped
- 1 sheet nori (seaweed), sliced into thin strips
Directions
- In a large pot, bring the chicken broth to a boil over medium heat.
- Add the chicken strips, carrot, zucchini, and mushrooms to the pot. Let it simmer for 10 minutes, or until the chicken is cooked through and the vegetables are tender.
- In a separate pot, bring water to a boil. Carefully add the eggs and boil for 6 minutes for soft-boiled eggs or 10 minutes for hard-boiled eggs. Remove from heat and run under cold water, then peel and slice in half.
- Add the cooked ramen noodles to the pot with the chicken and vegetables. Let it simmer for another 2-3 minutes.
- Ladle the ramen into bowls. Top with the green onions, nori strips, and a boiled egg half.
- Serve hot and enjoy!
