Fennel and Apple Salad

Ingredients
- 2 fennel bulbs (each about 500 g)trimmed
- 2 apples (each about 100-120 g)peeled and cored
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons extra-virgin olive oil
- Half a small red onionsliced
- A handful of fresh mint
Directions
- Put a large pot of cold water on the stove and bring to the boil.
- Carefully cut the fennel bulbs into quarters and try to avoid bursting into tears as you’re doing this.
- Place the fennel into the boiling waterreduce the heat and boil for 5 minutes.
- In the meantimepeel and core the applesthen cut into small slices.
- Drain the fennel and transfer to a bowl.
- Add the applesred onion slices and fresh mint to the bowl.
- Pour over the lemon juice and the extra-virgin olive oil and toss it like you’re a DJ at a big party.
- Serve the salad immediatelyor chill in the fridge for 10 minutes before serving.
