Ingredients
- 4 Cod fillets (150g each)
- 4 tomatoeschopped (500g total)
- 2 tablespoons caperstops and tails removed
- 2 tablespoons olive oil
- oreganoto taste
- freshly cracked pepperto taste
Directions
- Preheat the oven to 200°C.
- Place the cod fillets on a baking tray lined with parchment paper.
- In a bowlmix together the chopped tomatoescapersoreganoand a good few grinds of pepper.
- Divide the tomato mixture between the four cod filletsspooning it on top of each in an even layer.
- Drizzle the olive oil over the cod.
- Place the cod in the oven and bake for 15 minutes.
