Chickpea and Mushroom Curry

Ingredients
- 2 tablespoons oil
- 2 cloves garlicminced
- 2 teaspoons gingerminced
- 1 green chili pepperchopped (optional)
- 1/2 cup mushroomssliced
- 1 can cooked chickpeasrinsed and drained
- 2 tablespoons curry powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon ground coriander
- 1/2 teaspoon garam masala
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 2 cups vegetable broth
- 1/2 cup milk
- 2 tablespoons fresh cilantrochopped
Instructions
- Heat oil in a large pot over medium heatthen add garlic and ginger and cook for 1-2 minutes.
- Add the mushrooms and optional chili pepper and cook for 2-3 minutesstirring occasionally.
- Add the chickpeascurry powderturmericcoriandergaram masalacuminand black pepper and stir for 1 minute.
- Add the vegetable broth and milkbring to a boilthen reduce heat to low and simmer for 20 minutes until the vegetables are tender.
