- 50 g butter
- 1 leek, diced
- 2 cloves of garlic, finely chopped
- 400 g broccoli, cut into small pieces
- 700 ml of chicken or vegetable broth
- 250 ml of cream
- 200 g of grated cheddar cheese
- fresh thyme
- ground black pepper
- olive oil
Instructions
- Heat a large pot over medium-high heat.
- Add 50 grams of butter and when melted, add the diced leek and garlic.
- Cook for 3-4 minutes, stirring occasionally.
- Add the broccoli and stir to combine with the vegetables.
- Pour in the chicken/vegetable broth and bring to a boil.
- Reduce heat to lowcover the pot and simmer for 10 minutes.
- Add the cream and stir to combine.
- Turn off the heat and use a blender or hand immersion blender to blend the soup until smooth.
- Return the soup to the stoveand add the cheddar cheese.
- Cook over low heat for 2-3 minutes, stirring constantly, until the cheese is melted and incorporated.
- Add fresh thyme and season with ground black pepper.
- Serve with a drizzle of olive oil.
