Ingredients
- 1 block (150 grams) firm tofu
- 2 cups (500 ml) of small diced vegetabes of your choice
- 2 tablespoons (30 ml) of extra-virgin olive oil
- 2 tablespoons (30 ml) of balsamic vinegar
- 2 cloves of garlicminced
- 1 tablespoon (15 ml) of minced fresh ginger
- 1 teaspoon (5 ml) of freshly ground black pepper
- 1 tablespoon (15 ml) of minced fresh herbs (parsleycilantrobasil are all good options
- Optional: 1 tablespoon (15 ml) of sesame oil
Instructions
- Preheat your oven or grill to 375°F (190°C).
- Drain the block of tofu and cut into cubesabout 1 cm by 1 cm.
- Place the cubes on a lined baking tray or cookie sheet and lightly coat with olive oil and balsamic vinegar.
- Add the minced garlicgingerblack pepperand herbsand lightly mix until everything is evenly distributed.
- Place the tray in the oven or on the preheated grill and bake or grill for about 15 minutesflipping occasionally to ensure both sides are cooked evenly.
- While the tofu is grillinglightly sauté the diced vegetables in a large skillet with some olive oil until soft. Make sure to stir often to prevent sticking to the bottom of the pan.
- Once the vegetables are softadd the sesame oil (if using)and mix until everything is well combined.
