Roasted Sweet Potato and Sausage

Ingredients
- 2 Sweet Potatoespeeled (260g)
- 400g Sausage
- 2 Garlic Clovesdiced
- 2 Tablespoons of Olive Oil
Directions
- Pre heat the oven to 400 F (204 C).
- Peel the sweet potatoesmaking sure to remove all of the skin. Cut the sweet potatoes into bit sized cubes.
- Place the sausage and sweet potatoes in a large bowl and pour the olive oil over the ingredients. Mix until everything is evenly coated.
- Add the garlic and mix to combine.
- Line a baking sheet with parchment paper and spread the potatoes onto the baking sheet.
- Place the baking sheet in the pre heated oven and bake for 25 minutes.
- Remove the baking sheet from the oven and turn over the sweet potatoes and sausage. Bake for another 10 minutes or until the sweet potatoes are tender.
- Serve and enjoy!
