Ingredients
- 400 grams of raw beets
- 2 tablespoons of olive oil
- 1 garlic clove
- 2 tablespoons of fresh herbs (such as thyme, oregano, parsley, or chives)
- Salt and pepper (optional)
- Lemon juice (optional)
Directions
- Preheat the oven to 180°C (350°F).
- Peel and wash the beets.
- Cut the beets into cubes and place them in a baking dish.
- Add the olive oil, garlic, herbs, and a pinch of salt and pepper. Mix everything together. Make sure the cubes are well coated with the olive oil.
- Bake the cubes for 25-30 minutes. Keep an eye on them so they don’t burn.
- When the beets are soft and slightly golden in color, remove them from the oven.
- Roughly mash the beets with a fork and add a squeeze of lemon juice (optional).
- Serve warm in small dishes or verrines.
